Liver ciauscolo 100g sliced
This salami from Marche is made from very finely minced pork mixed with lard, pork liver, garlic, salt and pepper, which is then left to dry. The result is a soft salami, almost like a pâté, which is delicious spread onto a piece of crusty bread. It has a deeper colour and more intense flavour than the traditional Ciauscolo due to less fat being used and the addition of grated orange rind and nutmeg. Try it cooked on a griddle pan and served with some creamy mashed potato.
