This salami is made with finely ground pork mixed with pieces of fat. The salami is then pressed into a flat shape. Its flavour is quite sweet and delicate and is a welcome addition to any plate of antipasti. Serve along with some marinated artichokes (see Antipasti section), fresh bread and plenty of red wine.
