Egg pasta made by true artisans Pasta di Aldo. Only 50kg of hand-made pasta is produced each day, using a high ratio of eggs to semolina, which is ground finely or coarsely according to the shape of pasta to be made. The pasta is then slowly dried in a controlled environment for 8 hours before being packed into hand-made boxes.
