Serves two people 50g butter
4 tablespoons
extra virgin olive oil *1 garlic clove
1 anchovy fillet
40g
sliced bianchetto truffle *60g
Parma ham *160g
spelt pasta or good quality egg pasta *parmesan flakes *1. Melt the butter in a frying pan with the olive oil and add the garlic clove and anchovy fillet.
2. Cook for about 2 minutes over a low heat, breaking apart the anchovy fillet with a wooden spoon. Remove the garlic clove.
3. Cut the Parma ham into thin strips and roughly chop the sliced truffle.
4. Add the ham and truffle to the pan and cook over a low heat for 30 seconds.
5. In the meantime cook the pasta according to the packet instructions, reserving a cupful of cooking water. Add the pasta to the sauce, pour over enough of the cooking water so the pasta is not too dry.
6. Sprinkle with parmesan flakes and crushed black pepper before serving.
